Restaurant Ramen, Tsukemen
The main restaurant in Sakata City, Yamagata Prefecture was established in 1960. Expanding to Mitaka while maintaining the traditional taste.
Sakata's specialty, wonton noodles, is the signature dish. The light and rich soup made from niboshi (dried sardines), ago (raw fish), and kombu (kelp) goes perfectly with the medium-thin, coarse noodles. The ultra-thin wontons directly from the main store are made of silk kneaded into the dough, giving them a texture like angel's wings.
